Low Fat Lemon-Blueberry Muffins

Another muffin recipe today....this one is an example of "what I had left in my refrigerator."

I had 1/2 cup of blueberries, a blueberry yogurt, eggs, and a lemon.  So, blueberry-lemon muffins it was!  These turned out a lot better than I expected.  Super lemon-ey, not too sweet, and moist from the added yogurt.  Use any kind of non or low fat blueberry yogurt you like.  

My absolute favorite yogurt ever, of all time, for eternity is Wallaby yogurt.  It is so creamy, low fat, comes in unique flavors {like PEAR!}, and the best part - no artificial sweeteners.  I hate the taste of artificial sweeteners.  Yes, even Splenda.

Low Fat Lemon-Blueberry Muffins {makes 10 large muffins}
-1 cup all purpose flour
-2/3 cup oats {old fashioned or instant}
-1/3 cup white sugar
-1 low fat blueberry yogurt {about 1 cup}
-1 teaspoon salt
-1 teaspoon baking soda
-1 egg
-the zest from one lemon and the juice from 1/2 a lemon
-3/4 cup water
-1/2 cup blueberries

1. Pre-heat oven to 350 degrees and spray a standard size muffin pan with non-stick spray.
2. In a large mixing bowl, whisk together the dry ingredients {flour, oats, salt, baking soda, and sugar}.
3. Whisk the egg and add it along with the yogurt, water, lemon zest, and lemon juice to the dry ingredients. Finally, stir in the blueberries.
4. Spoon the batter into a muffin pan {this makes about 10 large...or 12 if you want to make the muffins a bit smaller} and bake for about 25 minutes.


April Wrap Up

So, April happened.  It was kind of a weird month for me.  Not sure why, but I felt kind of blah for a lot of it.

Wear: Anniversary Dinner

My husband and I went to dinner for our four year anniversary Thursday night.  I showered, watched Bravo for an hour while my hair dried, realized it was almost time to go and put on colored denim, a tank, and a light cardigan.  {Pretty much this outfit.}

I looked in the mirror and decided to change.  You know, dress it up a bit. An anniversary only happens once a year....so I threw on my favorite $15 dress.  If a $15 dress doesn't say "married for four years" then I don't know what does.

p.s. My husband took these pictures...which is why they're all a bit mad.

Low Carb Pizza Crust

I have seen low-carb pizza crust recipes on a lot of blogs and I was always a bit skeptical.  I mean, one of the points of pizza is carbs, right?  In my attempts to eat healthier {more fruits and veggies, less carbs, meat, etc}  I decided to give this recipe a try.

I grabbed inspiration from a few different recipes and came up with my own.  

Despite my skepticism, I was pleasantly surprised!  The crust was thin, crispy, an had a nice flavor from the flax meal.  Also, after eating a huge portion, I didn't feel bloated and stuffed.  Which was nice.  I love to over-eat pizza but I don't love the stuffed feeling afterwards.

I cooked my crust in a pie dish because I wasn't sure how it would hold up on a flat baking pan.  I think it would turn out fine if you baked it on a baking pan/cookie sheet that is covered in parchment paper and sprayed with a little non-stick cooking spray.

Low Carb Pizza Crust {makes a pizza that is enough for 2-3 people}
-2/3 cup ground flax meal
-1/2 teaspoon baking soda
-1/3 cup parmesan cheese
-1 egg
-1 tablespoon olive oil
-1 tablespoon honey
-salt and pepper

1. Use a wooden spoon and mix together everything.  Use clean hands to form the mixture into a ball and press into a pie dish {that has been well sprayed with non-stick cooking spray}.  Or, line a baking sheet with parchment paper, spray it with non-stick spray and press the dough out into a large circle.

2. Bake at 350 degrees for about 20 minutes.  
3. Remove crust from the oven and top with your favorite ingredients - I used lots of thin onion slices, fresh arugula, leftover roasted beets, tomatoes, fresh mozzarella, goat cheese, and dried oregano.

4. Put the pizza back in the oven, increase the heat to 400 degrees and bake for another 15-20 minutes...or until cheese is cooked and bubbling.


These Two

These two are just the best.  One day I might have a human child, but for now, these two are my babies.  And I love them more and more each day.

Every evening they run around/wrestle in the yard and the other night I caught them with my camera.

I gave all of these photos a vintage effect in Photoshop Elements.  I downloaded this action from The CoffeShop Blog.  After about a thousand minutes, I figured out how to install it and voila - vintage doggies!

Four Years Ago

Four years ago I was married.  I found myself saying the other day "four years is a long time to be married!"  But really, it isn't that long of a time. It just goes by so quickly....I cannot believe it has already been four years.

A few weeks ago when I was walking my dogs, I started thinking about my husband {I do my best thinking on dog walks} and I challenged myself to come up with five words that describe him.

Part of me wanted to say things like "annoying" or "crazy" because sometimes a husband/partner is annoying and sometimes they can drive you crazy.  But I decide to go the positive route.  It is so easy to get caught up in the day to day and forget what is so great about this person that I chose to marry.

Neil in five words:

1. Loyal - When he loves he loves whole-heartedly and he will defend them to the death.

2. Sensitive - he wears his heart on his sleeve and is not one of those guys who "hides" his emotions {I am the one to do that}.

3. Silly - he is just so funny.  He always makes me laugh with his malapropisms, unnecessary drama, and overall craziness.

4. Empathetic - Neil really feels for people.  In their good times and in their bad times.

5. Charming - but genuine.  His charm is not something he fakes. He means it.  He might forget about it in five minutes...but he means it.  It is why he is so successful in his career and why his employees always tell me he is the best boss they have ever had.  It is also why - no matter how hard he tries to push people away, they want stick by him.  His bark is far worse than his bite and deep down, he is sensitive and sweet and charming.

A few months ago I shared one of Neil's poems on this blog.  He is a fantastic writer.  Today I am going to share the poem he wrote the night before our wedding and read at the reception.

When you smile,

Weekend Wear - Katniss + Sunshine + Food

Saturday was a great day.  We live just enough inland that most days we get to avoid the marine layer that can make San Diego a little gray during the spring.  Saturday was one of those days.  All morning was sunny and warm.

I washed my dogs while my husband did yard work.   Yard work + my husband is a rarity.  I think it was maybe the third time I have ever witnessed such an event.  I blame the sunshine.  It makes people do crazy things.

Later that day we headed to the beach to meet a friend for a late lunch and a few drinks.  It was really cloudy by the beach, but the food and drinks were perfect.  

We ate at Raglan Public House.  This is actually the third time we have eaten there in about three weeks.

If you're in the San Diego area, you must go to Raglan.  By far one of the best burgers I have ever had - and I am quite the burger connoisseur.  I get one almost everywhere I go.

And the bloody mary's are amazing.  I am definitely not a bloody mary connoisseur {I mean, I think the one on Southwest is good, so you know.} but this one is extra extra good.  In my non-expert opinion.

I wore my hair in a side braid and my new favorite coral pink pants.  

My husband said I looked like Katniss.  Actually, he left to walk the dogs and when he got back I was ready to go and he said {not unlike a 14 year old girl} "it's Katnis!!!"

Soooo, I was Katniss for the day.  Or at least for a few hours until the braid fell out and I looked homeless.

Grilled Veggies + Sweet Potatoes

This is one of my favorite meals of all time.  Probably my most favorite vegetarian meal {after pizza}.  It is so amazing and versatile and healthy.

There really isn't a "recipe" so I am just going to tell you what I do.

Sprinkle some veggies {enough for however many pepole you're feeding} with a little olive oil, salt, and pepper {sliced zucchini, yellow squash, asparagus, hearts of palm, or bell peppers are all good options  - my favorite is hearts of palm or zucchini}.

Grill the veggies for about 12 minutes - until they are nice and charred and tender.

While the veggies are grilling, peel a small sweet potato {or more if you need to serve a few people} and slice into large pieces.  Boil the sweet potato for about 12 minutes, until it's fork tender.

Drain the water from the sweet potato pieces and mash with a small sprinkle of salt and a little lemon juice {about one wedge of lemon - more if you have a lot of sweet potatoes}.

On your plate, pile up the mashed sweet potatoes and the grilled veggie.  Top the entire thing with a good dose of fresh lemon juice, chopped fresh rosemary, and cheese - goat or fresh parmesan are ideal.  Goat is my favorite for this dish {and most others}.  Just pick a cheese with a nice somewhat strong flavor.

I know the combination of all these flavors might sound a bit odd - but trust me.  It all works and comes together so well.  You have to try it!


5 things friday

I hope you all had a wonderful week!  I took a little internet break and have decided to greatly limit the time I aimlessly browse the internet - I need to be more productive and inspired.  And although I find a lot of inspiration online, too much time online can drain my creativity.

In other news, the weather is supposed to be perfect and warm this weekend, which makes me happy =).

The internet lately....

I have been feeling in such a rut lately, so I took a little internet break the past two days.  

I was not completely offline {I still answered emails and did some tweeting...} but I didn't spend hours aimlessly looking at blogs, twitter, pinterest, facebook, etsy, etc.

Don't get me wrong - I love the internet.  The internet is kind of my best friend.  It provides endless amounts of entertainment and inspiration, but sometimes it is just too much.

I was falling way down deep into the comparison trap and needed a break.

So, I went thrifting {I didn't find anything...it happens}, went to Target {I always find something}, cooked some delicious food, made fabric tape {yeah that is possible}, finished a few orders + made a few new designs, and started a new jewelry organizer project that will also double as a craft show display piece.

That's a lot.  I got so much done when I stepped away from my laptop.

Although I love the internet and all, it can be a total time suck. I say "I am working,"  but I am really just wasting time....getting lost in things that are not pertinent.

Why am I telling you all this?  I don't know.  I guess I just wanted to say that I love the internet and we're not breaking up.  We just don't need to see each other every second of every day.
